First Look: Under Bakery at Dairy Road

From a tiny Mawson shopfront to an airy, light and bright space in arguably Canberra’s hottest precinct – Under’s next chapter is here.

Five years after opening the 70 sqm shop, Under has taken another leap, opening a second venue at Dairy Road in a purpose-built space nearly four times the size.

It’s been six years since Lach Cutting graduated from selling his baked goods at local farmers market stalls and launched a permanent spot for his artisanal breads and pastries – with Under putting Mawson shops on the map in the process.

The shopfront might be tiny, but it immediately began drawing crowds, nay, hordes, for Lach’s focaccias, sourdough loaves and buns. Most days the queue snakes down the street and customers well know to get in early lest they be faced with empty shelves and the bitter crumbs of disappointment.

Given its cult-like status, it makes sense Lach is scaling up. His new venue at the Dairy Road Precinct in Fyshwick is a purpose-built space nearly four times the size of Mawson. The kitchen is open and industrial and has been designed for perfect flow. It will allow the team to be more experimental and creative (Mawson could barely keep up with demand, much less break out in new directions).

While Mawson requires customers to queue, look through the window at what is on offer and either take it home, jostle for a handful of outdoor seats, or throw dignity to the wind and consume their heavenly Strawberry Danishes standing on the footpath (because honestly, who is expected to last an entire drive home?) customers in Dairy Road will enjoy a different experience.

For one, they will be able to find a spot to perch for dine-in while still being able to watch the bakers at work. As the bakery spills out to the Dairy Road gardens, customers will also be able to enjoy a coffee with their baked goods in the morning sun.

The offering will be similar to Mawson – expect daily sourdough loaves, sweet buns and pastries – but will expand as the bakery gets firing. More savoury items will be available: a morning plate with a slice of bread, jam and an egg, lunchtime plates and batch brew coffee from Barrio. Expect weekly pastry and lunch specials.
